It is a cereal grain plant of the grass family (Poaceae) and its edible starchy seeds. Commonly known in West Africa as Guinea Corn.Its common colors in West Africa are white, red and tan. It is rich in vitamins and minerals like vitamin B1,B6,copper,iron,magnesium,phosphorus,potassium,selenium,zinc. It gives health benefits as high anti-oxidants, lowers cholesterol, stabilizes blood sugar, prevents constipation and gluten-free.
Derivatives and Uses: Sorghum Syrup: widely used as sweetener in the food industry.It is lower in sugar than Molasses (which is derived from sugarcane) but higher in fructose giving a sweeter taste.
Flaked & Popped: flaked sorghum is as delicious other cereals grains like corn,oats,rice.It can be baked like granola bars and cookies and popped as well like popcorn. Brewing:malted sorghum behaves similarly like malted barley, In the mash, it is hydrated, its enzymes break down starches to sugars, and the sugar-containing wort is boiled, cooled, and fermented with brewers yeast. Example is Bard’s Beer which is made from Sorghum which makes the beer gluten-free
